Brush the beef with olive oil and season with salt and black pepper. Let the meat rest for 15 minutes at room temperature.
Heat a large frying pan over high heat. Sear the meat for 30 seconds on each side, add the butter and season with a spoon. Reduce the intensity of the burner to medium temperature and cook for 4 to 5 minutes on each side. The outside of the meat should be well broiled and crispy. Finally, let stand 4 to 8 minutes over a minimum heat, covered or in the oven at 325. Adjust the time to your preference, medium rare or well done.
