• 1 Quebec pork fillet with mustard and honey (approximately 500g)
• 1 tbsp olive oil
• 1 tbsp butter
• 1 clove of garlic, chopped
• 1 tbsp Dijon mustard (optional, for a spicier touch)
• Salt and pepper to taste

Preparation :

1. Preheat the oven to 200°C (400°F) .
2. Heat the oil and butter in a frying pan and sear the fillet for 2 minutes on each side for a nice golden crust.
3. Place it on a baking sheet and bake for 15 to 18 minutes (or until 63°C/145°F at the core).
